Park Hyatt Dubai's Traiteur Restaurant Introduces Special Seasonal Dishes

White Asparagus and Sauvignon Blanc Pairing Throughout the Month of May

DUBAI, UAE (May 2014) – As April draws to an end, May brings with it the season of white asparagus. Traiteur’s Chef de Cuisine Daniel Hoefler and his team of chefs have created a sumptuous variety of dishes using this delicious vegetable as the star ingredient. Each dish is paired with a crisp and elegant Sauvignon Blanc to further enhance the aromatic flavours.  

For starters, guests can enjoy marinated White Asparagus with Wild Berries, Baby Spinach and Cecina de León or Raw and Cooked Asparagus Salad with Baked Country Egg, Goat Cheese Custards and Pommery Vinaigrette. Creamy Asparagus Soup with Fromage Blanc Agnolotti and Sliced Truffle is also a delectable addition to the starters selection. 

For the Dubai Restaurant’s main course, guests can savour Grilled Filet of Yellowfin Seabream with Fried Asparagus Risolee, Carrot Dijon Puree and Ginger Hollandaise; Pan-roasted Yellow Farm Chicken with Green Asparagus, Wild Garlic Risetti and Morels; or White & Green Asparagus Fregola, with Brie de Meaux, Rocket Lettuce and Sour Dough Crisp. 

Guests can also choose the traditional asparagus dinner with a choice of 250 or 500 grams of Green or White Asparagus with a choice of side dishes like Black Forrest Ham, Smoked Salmon, Cooked Ham and Poached Eggs.

This special menu will accompany Traiteur’s à la carte menu for those who opt to enjoy their Dubai Brunch and all-time favourites.

Guests can enjoy a delectable five-course degustation menu, priced at AED 495 per person.
