The Eye Food; Myth or Reality?
What do you think of when you see a carrot? You probably think of rabbits, and the color orange right? You may even think of Bugs Bunny.


People think that eating a lot of carrots will help maintain good eyesight. Is that a myth? Are they really good for your health, or do they fall into the category of food that you eat because your mother made you?

Vitamin A

Vitamin A is a family of fat-soluble vitamins. Retinol is one of the most active, or usable, forms of vitamin A, and is found in animal foods such as liver and eggs and in some fortified food products.

Beta carotene is a substance that is converted to Vitamin A in the human body. This vitamin helps transfer fat to energy. A 1/2 cup serving of cooked carrots contains four times the recommended daily intake of Vitamin A. Beta carotene is also a powerful antioxidant effective in fighting against some forms of cancer.

Are you seeing a pattern? Also you can look at the word "carotenoid" and see carot (carrot) in it.

It helps maintain the surface linings of the eyes and the respiratory, urinary, and intestinal tracts. When those linings break down, bacteria can enter the body and cause infection, therefore it is good in several ways and it is not just eye food. Vitamin A also helps maintain the integrity of skin and mucous membranes that function as a barrier to bacteria and viruses.

The plant pigment that gives carrots their vivid orange color is Beta-Carotene, which our bodies convert into Vitamin A as needed.

One carrot supplies enough Beta-Carotene to meet more than twice our daily requirement for Vitamin A. Carrots are also a source of fiber, potassium, and Vitamin C.

Vitamin A is important for maintaining good eyesight, especially at night when it helps our eyes adjust to the dark. Vitamin A also helps fight infection, keeps skin and hair healthy, and supports bone growth and maintenance.

Your body will not absorb too much, it will simpply reduce the quantity of the vitamin intake.

Carrot Nutrition
Carrots are low in calories, and are an excellent source of beta carotene, which is converted to Vitamin A by the body. Carrots are also a good source of fiber.




Carrots are the richest source of beta-carotene. This is of great benefit in the fight against cancer. Studies show that eating carrots reduces the incidence of cancer and may even reverse symptoms.
Not just good for the eyes, but carrots are also beneficial for the heart, circulation, skin and lungs. The bright orange color of carrots tell you they're an excellent source of Vitamin A.

So don't worry about gaining too much weight, and you don't have to bribe your kids to eat them, they should want to. They say they're gross right? Well, there are many ways to prepare carrots, many recipes to use, and a variation of dips that can be used to enhance the flavor. (I prefer cooked.)


Eating Tips
Carrots are eaten both raw and cooked and they can be stored for winter use. You should store carrots with the green tops trimmed. Although the tops are edible, during storage this greenery robs the carrot of moisture and nutritional value. Carrots will keep for several weeks in the crisper drawer of the refrigerator in perforated plastic bags. If you plan to use the green tops in soups and stews, store them separately, as they will only keep for a few days.

Pick carrots that are smooth, firm and well-shaped and bright orange to orange-red in color.
